Cinnamon "Giraffe" Rolls

This recipe came into being because I saw a picture of a giraffe, which led to a craving for cinnamon rolls. Whenever I see cinnamon rolls, I always think they look like giraffe print. Hence the name of this recipe. Strange maybe, delicious definitely!

These rolls are plant based, oil-free, and refined sugar-free. If you are oil-free/fat-free, make sure to use VeganEgg or egg replacer for this recipe instead of flax. Also check your other ingredients to make sure they were not made with oil (especially the raisins and currants).

Note: I don't recommend eating these on a daily basis. Even though they're "healthy", keep in mind they are still processed and should be a minimal part of your diet (save these for weekends/special occasions!).

Giraffe Rolls

Dry Ingredients:

2 cups GF flour or spelt flour

1/2 tsp baking soda

2 tsp baking powder

2 tsp cinnamon

Wet Ingredients:

2 tsp vanilla

2 tbsp maple syrup

1 banana, pureed

1 VeganEgg or other egg replacer (or 2 tbsp flax + 6 tbsp water)

Cinnamon Sauce:

Zante currants or raisins

1 tsp cinnamon

1/2 cup apple sauce

2 tbsp maple syrup

Preheat oven to 350 degrees. Mix dry and wet ingredients in separate bowls, then pour the wet into the dry, and mix together. Chill dough for 20 minutes, then roll it out flat with a rolling pin. Spread about 2 tablespoons of the Cinnamon Sauce onto the rolled out dough, and then roll up the dough so that it looks like a log. Cut "log" into 1" slices and place into a bread pan. Bake for 15-20 minutes. Pour left over Cinnamon Sauce over baked rolls. Serve hot, and enjoy!
